Appetite for Reduction’s Green Goddess Garlic Dressing – submitted by guest blogger Nancy Vanacore

My friend Nancy is one of the most awesome human beings I know.  She is a health nut, wonderful and sweet person.  The woman looks 40 and she’s 60!!!  Atleast I thought she was my age.  Anyway, I requested she submit to me her favorite Vitamix recipe.

Here it is: 

Ingredients:

  • 2-3 average sized cloves of garlic
  • 1/2 C fresh chives
  • 1/2 C fresh parsley
  • 3 T tahini
  • 2 T nutritional yeast
  • 1 T miso
  • 1/3 C water
  • 2 T fresh lemon juice
  • 1/2 t salt (I did not use salt in my dressing)

Method:

Pulse the garlic, the chives, and the parsley in a food processor to chop everything up.  Add the remaining ingredients and blend until very smooth.  Use a rubber spactula to scrape down the sides a few times.  Now adjust to your liking.  More alt, more garlic, you can thin the dressing with a 1 or 2 T of water.  Note, it will thicken a bit as it’s refrigerated, so if it appears thin, don’t worry.

  1. I made this tonight and I was very pleasantly surprised. I just started the Eat to Live way of eating and it’s been really hard finding good dressings for my salads. Love this!

    1. I think you just did, my friend wrote this and I do know who Chandra Moskowitz is so thank you for letting me know, I didn’t know my friend had used this from the book and I appreciate you posting this information. Much appreciated :-)
