I want to thank all of my fantastic friends for their support these past few weeks. After several months my beloved cousin, Bruce Kippur has lost his battle with lung cancer. So, it is with this in mind I am sharing with you some healthy tips from Dr. Fuhrman’s anti-cancer diet.
- 4 fresh fruits daily
- 1 large raw green salad daily
- 2 other cooked (steamed) veggies such as broccoli, carrots & peas, squash or other colorful vegetables.
- 1C dried split peas and/or beans
- 4 C water
- 4 medium onions
- 6-10 medium zucchini
- 3 leek stalks
- 2 bunches of kale, collards or other greens, chopped, tough stems and center ribs cut off and discarded
- 5 lbs carrots (4-5 C juice)s
- 2 bunches organic celery (2-3 C juice)
- 1 C raw cashews
- 8 oz mushrooms
- place beans and water in a very large pot over low heat
- add whole onions, whole zucchini and whole leeks into the pot along with chopped kale. Add carrot juice and celery
- simmer mixture until onions, zucchini and leeks are soft, about 20 minutes. Remove the soft onions, zucchini, and leeks from pot along with some soup liquid, being carefulto leave the beans and some of the kale in the pot.
- using a blender or food processor, completely blend/puree the onions, zucchini, and leeks. Add more soup liquid and cashews to the mixture and blend in. Return theblended, creamy mixture back to the pot. Add mushrooms an simmer another 30 min. or until beans are soft.

Lisa, I am so sorry to hear about your cousin. It certainly is difficult to lose a loved one, but I have to believe that Bruce is now pain free, and moving to an even better place. I know it doesn’t ease the loss you are feeling. Mikey has been gone two and a half weeks and I think about him every single day, but also remember all that was good about him. I hope your memories of Bruce will get you to that place as well. All my love, Karen
