Guest Blog – Nancy Vanacore

Hi friends of Lisa,

I’m thrilled that Lisa invited me to write a guest post for her blog.  I consider Lisa one of my dearest friends.  I know no one with more energy and enthusiasm for life than Lisa.  She is a continual inspiration.  When Lisa hears about a new resource or health discovery, – Boom! – she is on it getting more information.  I love that about her.

When I began my health journey a few years ago, I never anticipated the places it would take me, or the people I would meet.  In fact Lisa and I work at the same university but had never met until we both attended an event at Whole Foods.

Through the healthy eating specialists at Whole Foods I have been introduced to book clubs, supper clubs, and seminars all focused on a plant based, high nutrient way of eating.

I’d love to share a few of my favorite books, blogs (in addition to LisasLentils) and a recipe with you here.

Favorite Kitchen Tool:

Vitamix 5200 – can’t cook without it!

Recipe:

Even though this is my favorite recipe, I try not to make it very often because I can’t stop eating it.  See what you think.

Chocolate Pudding – Recipe from Dr. Joel Fuhrman (but you knew that)

  • Avocado (1)
  • 4-5 medjool dates
  • 1/4 C organic cocoa powder
  • 1 t vanilla
  • 1/4 C water or almond milk

Place all ingredients except water in blender.  Blend and gradually add water to achieve a creamy consitency.  Divide into serving cups.  Cover and chill.  Total prep time 10 minutes!
