Natasha’s Plum Jelly

I had a load of plums in my organic order so I decided to make jelly.  See below for a modified recipe which includes yummy raw coconut crystals (you will find with the sugars at Whole Foods).  I just decided to name this after my niece for fun.


  • 2 C chopped plums, skins removed
  • 1 C raw coconut crystals
  • 1 T lemon juice


Cook plums with lemon juice on medium heat for 5 minutes.  Add sugar and stir until everything is combined.  Cook for an additional 15-20 minutes until the jam has been reduced to the consistency of thick honey.  Cool and enjoy!!!!  This makes 1 jar of jelly.  Great for thanksgiving hostess gift!
