Potatoes are a member of the nightshade family which also includes tomatoes, eggplants and bell pepers. There are around 100 varieties of edible potatoes. Potatoes are a good source of potassium, vitamin B6 and C, niacin, panthothenic acid, and dietary fiber. Potatoes also include 2.5 grams of protien and 115 calories. Potatoes can be boiled, baked, mashed or fried.
- quarter two medium sized potatoes, brush with olive ooils and place them on a grill at medicum high heat for 6 minutes on each side.
- cut potatoes into stick shapes for french fries, toss with a little olvie oil, place on a cookie sheet and bake at 350 for 20 minutes, then durn over and bake another 17 minutes.
